This lot includes two excellent foodservice textbooks. The first one, 'Quantity Food Purchasing' by Lendal H. Kotschevar, was published by John Wiley & Sons in 1961. The second, 'Food and Beverage Cost Planning and Control Procedures' by Carl H. Albers, was released by The Educational Institute of the American Hotel & Motel Association in 1981. These books are in good condition. They have light soiling on the cover and spine, some marks from the previous owner on the endpapers, and minor foxing on the text blocks and page edges, but readability is not affected. There's also some shelf and edge wear, with a creased spine on one book, yet the pages remain tightly bound. A great resource for foodservice professionals!
